| The Guide to Cooking Schools is the only comprehensive,al resource to information about culinary and wine educational pro-grams. This eighth annual edition, the largest to date, contains detaileddescriptions of 322 career and professional and 448 nonvocational andvacation programs (77 new to this edition), 100 culinary apprentice-ships, 65 wine appreciation programs, and 21 food and wine organiza-tions. All .schools have stated that they provide instruction in ~Englishand all listings are free.In lune, 1995, we mailed a 36-question survey to more than 1,500 of thetop chefs in the U.S. and Europe. The purpose was to gather informationabout their professional experiences and activities that will help aspir-ing chefs determine whether to pursue a culinary career.
