SERVES 4 1 Ib snow peas, trimmed salt V4 cup butter or margarine, softened 1 teaspoon dried basil 1/2 teaspoon grated orange peel pepper 2 slices of orange, to garnish I Bring a saucepan of salted water to a boil, add the snow peas and bring back to a boil. Reduce the heal cover and simmer for about 5 minutes until just tender, but still crisp (see Watchpoint). 2 Meanwhile. beat the butter in a small bowl with the basil orange peel and a littl~ pepper. Mix u atil well blended. 3 Drain the snow peas thoroughly in a colander~ then return to the pan, Add the butter m~xture and toss gently over low heat until snow peas are thoroughly coated. 4 Transfer the snow peas to a serving dish, garnish with slices of orange twisted decoratively and serve at once
