TO THE READER HIS BOOK is a guide to good nutrition throughout your life. Al- though the emphasis is on eating to preserve health, it does not contain dietary prescriptions for specific medical problems. Do not use any of the advice herein for self-treatment without your physi- cian s knowledge and okay. Even if you are perfectly healthy, a radical, abrupt change in your diet is un wise without first consulting your physi- cian. A certain amount of redundancy has been built into the book. Since many topics in nutrition are closely interrelated and since many readers are likely to refer to individ~!al chapters from time to time, particular points have been made wherever they happen to be relevant. And in many cases, the reader is referred to other chapters for ex- panded discussions of certain points. For example, while animal fats are discussed primarily in the chapter on fats and cholesterol, they are also mentioned in the chapters on protein and vegetarian diets. The chapters in this book have been read for technical accuracy by area specialists (see acknowledgments). These specialists are highly regarded not only for their expertise, but also for their unbiased ap- proach to research. Throughout the book, unless otherwise attributed, all opinions expressed are those of the author, who is beholden to no special interest group or industry. I have based my conclusions on an extensive and detailed study of the findings of scientifically sound nutrition research. To be sure, this is an area of biology and medicine that has been sorely neglected by the research establishment. Only now is this era of neglect e0ming to an end as consumer concerns make themselves felt in Con- gress and in relevant government agencies. The information that fol- 10ws is based on the best available research as of mid-1980. From time to time, new findings will change our understanding and the nutritional guidance derived from it. For now, however, we all have to eat. We eann0t wait for the \"last word\" on nutrition before we decide how to structure our diets. We know enough now about healthful eating to make reasonable recommendations for most people, who quite natu- rally want to enjoy their food for as many healthful years as possible.
