Preface This is a personal book---eclectic in its gathering of facts, myths, and other thoughts that lie somewhere between the two. I make no claim to exhausting the vastness of the subject. In varying degrees, it covers history, mythology, and nutrition; there are some stories, poetry, and songs; there are charts r and recipes. Technical and botanical data have been kept to a minimum. I iT have drawn on more sources than can be properly credited in this space, and I am deeply indebted to the many friends and passersby who have gra- ciously shared their knowledge with me. I cannot adequately express my thanks to Kathy Komaroff, Marcia Davis, and my mother, Jessie Bankoff, for all their help in researching and compiling; to the editor-in-chief of Grosset & Dunlap, Bob Markel, for his encouragement; to my editor, Kevin Curley, for his invaluable assistance and patience; to Dr. Louis p. Savas i for his expert advice; to my husband, Ira, for everything; and to all the i plants which provide us with living food and which have inspired this book.
